It has been a rocky relationship. (hee hee)
When I was a pre-teen my mom had made some date candy for Christmas that didn't "set". I ate an unladylike amount of it with a spoon and thereafter, for years!, I couldn't stand the thought of dates, let alone actually eat one.
Thankfully, that has passed and I can once again enjoy a date. (It makes me laugh every time I write "date". I know that may be immature of me, but I am laughing anyway. Just be thankful I am not including every snarky date comment I think of.)
Dates are grown on date palm trees in tropical areas around the world. They are a main ingredient in many energy bars because they add a sweetness and keep the bar moist and pliable without adding extra fat.
I made some muffins the other day and incorprated chopped dates. They are quite healthy, as muffins go- with dates, oatmeal, yogurt and coconut oil. You can find the recipe on the Recipe page. Try them yourself. Mini muffins make a great, quick breakfast or after school snack.
